According to the laws of inversion

This is a non-aromatized product, which is used as a powerful anti-crystallizer, as well as a moisture-binding element. Replacing sugar with this syrup can significantly increase the plasticity of the dough and contributes to the long-term storage of finished products from it. Sugar fudge, icing, cream with invert syrup do not get sugared.

Instead of molasses, corn syrup, maple syrup or confectionery glucose, it is better to use invert syrup. The dough will acquire a beautiful golden hue, will not be stale for a long time, and will keep its taste.
